Coconut chocolate chip cookies (gluten free & vegan). Mmm!!!! This is what I do when I don’t feel good…bake!
Here’s the recipe:
1/4 cup & 3 tbsp gluten free all purpose baking flour (I use Bob’s Red Mill)
1/4 tsp baking powder
1/4 tsp sea salt
1/4 cup melted Earth Balance (or something similar)
1/4 cup agave (or you can use organic sugar instead)
1 tbsp warm water
1/2 tsp vanilla extract
1 tsp ground flax seed
4 oz. shredded coconut
4 oz. chocolate chips (whichever brand you prefer)
Preheat oven to 350. Mix in a small bowl the ground flax and the warm water, which acts like the ‘egg.’ In a separate bowl, mix the flour, baking powder and the sea salt. In another bowl mix all the other ingredients, then add in the dry ingredients, followed lastly by the coconut and the chocolate chips. Bake for 8 minutes…then eat! Super simple and mega tasty!
PS-the batter is super chunky, which is correct, but just to make it a bit more cohesive I add a splash of almond milk (or rice or soy, whatever), to make it less dry.
